How does the food preservation process change depending on the scale of production? EXPLORATION PATHS The process of transforming meat into charcuterie dates back to ancient times. Even the Romans used salting and smoking techniques to effectively preserve meat in the absence of cold. Watch the 360 Exceptional Charcuterie video by Christophe Gueze – Ardèche which presents a more artisanal, small-scale process of the charcuterie process. It should be noted that the meat used in this video is pork and that the action takes place in France. Move around the image while viewing to see details of the process. What particular preservatives are used in this process? What is the result on the meat and the conservation of this product? ACCESSIBLE VERSION VIRTUAL VERSION The foods found on grocery shelves are often “ultra-processed” and produced massively on a large scale in factories. This type of food contains several products, such as organic compounds, which extend the list of ingredients. ●Watch the Ultra-Processed Foods video to learn more. Do you have this type of food at home? Find five products that would be examples of ultra-processed foods. ●Watch the video Behind the scenes of surimi making. This ultra-processed product is very popular in sushi and salads. What types of chemicals are used by the food industry in the production of ultra-processed foods? What are these chemical compounds used for? Why are they privileged? SEARCH KEYWORDS ●Ultra-processed food ●Artisanal production ●Salting ●Charcuterie Food industry

FORMATIVE ASSESSMENT Many processed foods contain chemicals that serve to enhance flavor or change color, or that act as a preservative or stabilizer. Each company therefore has its own recipe, a list of specific ingredients that achieves the expected result in order to convince consumers to buy their product. Watch the video Always popular, breakfast sausages! in which the ingredients of various sausages are compared. 1.For the processed food product you chose for the module's summative assessment task, find three or four variants as well as the list of ingredients for each of the companies that produce it. 2.What chemical compounds are added for preservation, taste or stability? How do you know? 3.Should we put warnings on these types of processed products? What information about added chemicals should be communicated to the public? 4.For the processed food product you have chosen, indicate the name and structure of the organic molecules present. What organic chemical reactions are possible from these organic molecules? Checks the adapted evaluation grid to verify the task criteria. Answer all questions and submit the work in the loft.
